Chocofruit Chocolate Mousse

Ingredients

  • 200 g (7 oz) 70% dark chocolate
  • 3 eggs, separated, at room temperature
  • 1 cup (240 ml) 35% whipping cream, very cold
  • 2 tbsp granulated sugar, divided
  • Nature’s Touch Chocofruit, halved

Step 1

Gently melt the chocolate in a double boiler. Let it cool for a few minutes (this step is very important).

Step 2

Add the egg yolks to the melted chocolate, one at a time, whisking until smooth.

Step 3

In a separate bowl, beat the egg whites with a pinch of salt. When they start to foam, add 1 tbsp sugar and whisk until stiff peaks form.

Step 4

In another bowl, whip the 35% cream with the remaining 1 tbsp sugar until soft to medium peaks form (it should remain light and flexible).

Step 5

Gently fold the whipped cream into the chocolate mixture first, then fold in the egg whites in two additions using a spatula, being careful not to deflate the air. Cover and refrigerate for 2–3 hours.

Step 6

To assemble the verrines, add a little mousse to the bottom, place halved Chocofruit around the edge, then add more mousse on top. Garnish with 1 halved Chocofruit on top and serve.
