Ingredients

  • Dressing ingredients
  • ½ cup of coconut milk
  • 1 tbsp. curry powder
  • 1 garlic clove, finely chopped
  • 2 tbsp. lime juice
  • Pinch of salt
  • Salad ingredients
  • 2 cups of Nature’s Touch Organic or Tested for Pesticide Residue Frozen Mangos, thawed
  • 2 cups of cooked shrimp, cut into pieces
  • 1 cup of cherry tomatoes, halved
  • Garnish
  • A handful of fresh coriander, chopped

Step 1

Combine all of the dressing ingredients in a bowl. Set aside.

Step 2

Place all of the salad ingredients in a large bowl, add the dressing and mix.

Step 3

Garnish with the chopped coriander and serve!
