Mango Yogurt Bark from Abbey Sharp

Ingredients

  • 2 cups Nature’s Touch Frozen Mango, slightly thawed
  • 1½ cups plain Greek yogurt (or coconut yogurt for dairy-free)
  • 1-2 tsp maple syrup or honey, to taste
  • Toppings

  • 1/2 cup toasted coconut flakes
  • ⅓ cup chopped cashews
  • Lime zest

Step 1

To a blender, puree the frozen mango until smooth. Set aside.

Step 2

In another bowl, sweeten the greek yogurt to taste.

Step 3

Line a baking sheet with parchment paper and spread the yogurt out onto the sheet. Add the mango on top and swirl to make a pretty white and yellow design (it should be about ¼-½ inch thick).

Step 4

Sprinkle with shredded coconut, cashews, and lime zest.

Step 5

Freeze for at least 3-4 hours or until completely firm.

Step 6

Once frozen, break or cut into bark-style pieces. Enjoy cold or store in an airtight container in the freezer for later.
