Savory broccoli waffles from Abbey Sharp

Ingredients

  • 1 ½ cup Nature’s Touch Frozen broccoli
  • ½ cup cottage cheese
  • 1 cup whole wheat flour
  • ¼ cup 2% high protein milk
  • ½ cup finely shredded aged cheddar cheese
  • 6 tbsp finely grated parmesan cheese, divided
  • 3/4 tsp kosher salt
  • ¼ tsp ground pepper

Step 1

In a food processor, pulse the Nature’s Touch frozen broccoli until the size of rice grains or smaller. Remove and place in a medium bowl.

Step 2

Add the cottage cheese and process until smooth.

Step 3

To a large bowl, mix together the grated broccoli florets, cottage cheese, milk, nutritional yeast, salt, and pepper.

Step 4

Add a large scoop to the middle of a greased waffle iron (filling only about ⅔ of the way). Sprinkle with parmesan cheese and cook according to waffle iron instructions or until golden brown. Enjoy warm.
