Very Berry Burst

Ingredients

  • 1 cup Nature's Touch frozen organic very berry burst (or 1 bag)
  • 1 cup 35% whipping cream
  • 1/3 cup granulated sugar
  • 1 tsp vanilla extract
  • 250 g cream cheese
  • Zest of 1/2 lemon
  • Juice of 1/2 lemon

Step 1

Pour the frozen berries into a bowl and defrost in the microwave for 2 minutes. Let cool then mash evenly with a potato masher.

Step 2

Pour the sugar and vanilla extract into a whipping cream bowl. Whip until stiff peaks form. Store in the refrigerator.

Step 3

Pour the cream cheese into another bowl then add the lemon juice and zest. Beat with a mixer for a few seconds or until the preparation is smooth.

Step 4

Add the berries to the cream cheese. Mix evenly.

Step 5

Finally add the whipped cream, mixing gently with a spatula.

Step 6

Store in the refrigerator 3 hours before serving. Divide the preparation into beautiful dessert cups, garnishing each portion with berries, grated chocolate or even coconut, if desired.
