Ingredients

  • ¾ cup cottage cheese
  • 2 large eggs
  • 2 tablespoons maple syrup
  • 1 cup oat flour (oats ground into flour using a food processor)
  • 1 teaspoon baking powder
  • ¾ cup Nature’s Touch frozen Organic Very Berry Burst

Step 1

Preheat the oven to 350°F (175°C). Grease individual square glass molds.

Step 2

In a blender, combine the cottage cheese, eggs, maple syrup, oat flour, and baking powder. Blend until smooth.

Step 3

Fold in the frozen berries gently until just combined. Avoid over-mixing so the batter stays light in colour.

Step 4

Pour the batter evenly into the molds.

Step 5

Bake for 22 minutes or until a toothpick inserted in the center comes out clean. Let cool slightly before serving.

Step 6

Serve with maple syrup and additional thawed Nature’s Touch frozen berries, if desired.
