Ingredients

  • 1 tablespoon olive oil
  • 2 shallots, chopped
  • 1 bag of Nature’s Touch frozen broccoli (500g), thawed, well-drained, and the florets cut in half
  • 10 large eggs
  • 1 cup of shredded cheese (your choice)
  • Salt and black pepper, to taste

Step 1

Preheat the oven to 375°F. In a 28 to 30 cm (11-12 inch) greased skillet, sauté the broccoli and shallots for 3 to 4 minutes to evaporate any liquid. Season with salt and pepper to taste.

Step 2

In a large bowl, whisk the eggs, then add the cheese along with salt and black pepper. Mix well.

Step 3

Pour the eggs over the vegetables in the skillet. Cook over medium-low heat for 4 to 5 minutes, then finish cooking in the oven for 10 minutes.

Let it rest for 5 minutes before slicing and serving.
