Ingredients

  • 2 cups plain Greek yogurt
  • ½ cup high-protein milk of choice
  • 3 tbsp maple syrup or honey
  • ½ cup chia seeds
  • 2 tsp vanilla extract
  • Pinch of salt
  • ⅓ cup Nature's Touch frozen raspberries, thawed (for mixing)
  • ¼ cup Nature's Touch frozen raspberries, thawed (for topping)
  • 1½ tsp matcha powder
  • 3 tbsp pistachios, chopped

Step 1

In a large bowl, whisk together the yogurt, milk, maple syrup, chia seeds, vanilla, and salt until well combined. Divide the mixture evenly between two bowls.

Step 2

Mash ⅓ cup thawed raspberries into the first bowl, stirring until the pudding turns pink and the berries are well distributed.

Step 3

Stir the matcha powder into the second bowl until smooth and evenly green, with no lumps.

Step 4

Cover both bowls and refrigerate for 1 to 2 hours, or until the chia seeds have fully absorbed the liquid and the pudding has thickened.

Step 5

Spoon alternating layers of raspberry and matcha pudding into glasses or jars. Top with the remaining ¼ cup raspberries and chopped pistachios.
