Ingredients

  • 1 tbsp butter
  • 1 medium yellow onion, finely chopped
  • ½ cup white quinoa, rinsed
  • 1 bag (500 g) Nature’s Touch frozen broccoli
  • 4 cups chicken broth
  • 1 cup 15% cooking cream
  • 1 cup shredded cheese
  • Salt and black pepper, to taste

Step 1

In a large pot, heat the butter over medium heat. Add the onion and sauté for 3–4 minutes until translucent.

Step 2

Add the rinsed quinoa, frozen broccoli, and chicken broth. Bring to a boil.

Step 3

Reduce heat, cover, and simmer uncovered for 12–14 minutes, or until the quinoa is fully cooked.

Step 4

Using an immersion blender, puree half of the soup until smooth.

Step 5

Add the cream and shredded cheese. Stir over low heat until the cheese is completely melted.

Step 6

Season with salt and black pepper to taste. Adjust the texture with a little extra broth or milk if needed.

This soup lasts for up to 4 days in the refrigerator and freezes very well.
